Pumpkin ice cream sandwiches

I was in the grocery store the other day looking for ice cream with no idea which flavor I wanted to bring home. Then I spotted a tub of Pumpkin pie ice cream by Dryers. We are a pumpkin pie lovin' crew here, so I grabbed it and brought it home. But instead of leaving the ice cream for the bowl I decided to try something new. I scooped the ice cream into my mini bread pan and put it back in the freezer for the night. The next day I grabbed the ice cream and pulled out some graham crackers. I cut the “loaves” of ice cream into slices and layered between two graham crackers, wrapped each sandwich in plastic wrap and then put them back in the freezer for the day.

They tasted just like pumpkin pie… graham cracker crust and all. The best part, I took  all the cookies over to my folks house for a family night and my dad took the leftovers. I usually can't give stuff away, so they must have been tasty to more than just me. Yay for Yummy!!!

You could pretty up your own ice cream sandwiches by adding some kind of fancy little embellishment. My kids don't care how pretty something is, so half the time I don't both… if you are serving these for guests, adding a dainty little flourish with a simple icing would be the perfect final touch.
