Why is it cupcakes seem to have more frosting than cake? We're piling on the delicious creamy sugar topping and I think it's getting out of hand. Don't get me wrong, I LOVE cupcakes. I can't seem to make them as moist and delicious as the store made cupcakes – but I'm not holding a grudge. I'm just ready for a change. So this year, for my daughter's birthday, we made muffins instead. I don't think there's too much difference in the packaged mixed when it comes to sugar. But, somehow, you say “muffin” and the frosting expectation changes drastically.
So, we spruced up our birthday muffins to make a yummy glazed muffin that was perfect for a morning birthday party.
I can make home made muffins and glaze, but lately I've been short on time to breathe let alone make a whole batch of from scratch goodies. So here's the shortcut for yummy treats the kids will love.
What you'll need:
- Muffin mix
- Frosting
- Fork
Make easy glazed muffins in less than 30 minutes
- Make a batch of muffins according to the package instructions.
- As soon as the muffins come out of the oven, and before you remove them from the tray, add about a teaspoon or 2 of frosting to the top of the muffin. The heat will melt the frosting so you can easily spread it around. I use a fork to spread the frosting, it doesn't take much to cover the top of each muffin.
- Let the frosting cool a bit, then remove each muffin from the tray. You'll want to add a second muffin/cupcake liner to each muffin as the frosting will spill over the edge.
That's it. They look pretty and taste great without the 3″ of sugar fluffy frosting on top.
If you have your own favorite muffin or frosting recipes, definitely use them. We love the Betty Crocker Triple Berry muffin mixes, just add milk and bake – they are SOOOO good! When cooking, I do love to make things from scratch, but I don't always know how or I don't have the time. So, sometimes partially home made is the best I can do. I like it much better than completely store bought, it makes me feel like I made something special for someone special – that's the best part.
