Fruit and dessert means it's healthy and yummy, right? This apple blueberry baked dessert is easy to make and can be pretty healthy, so I say. I had some blueberries that were on their way out along with some apples, I cut everything up, threw it in a pot and call it delicious. That's an easy treat for the whole family.
I don't have an exact recipe for this, so bear with me. You can adjust it how you'd like for your own taste and available ingredients. I like to wing it a little depending on how my tastebuds feel that day. Sometimes the blueberries aren't as sweet or sometimes everything is too sweet, so I adjust the sugar and play with flavors a little. You can do the same. Also, the crumble can include a little bit of oatmeal if you'd like. I use whole wheat flour.
Fruit mix
- 2-3 apples
- 1/2 cup fresh blueberries
- 1/3 sugar
- 1/2 cup water
- 1 tsp cinnamon
Crumble
- 2/3 cup flour
- 1/2 cup sugar
- 1/4 cup butter
- 2 TBS milk
- Make fruit mix
- Make crumble
- Pour fruit into baking pan, top with crumble.
- Bake for 45 minutes.
Now lets get going… the real detailed instructions are below…
Start off with about 3 apples, remove the skin and cut up and 1/2 cup blueberries. Mix them together and add in some cinnamon.
Mix in about 1/3 cup of sugar and 1/2 cup of water. Pour into a saucepan and cook on medium heat, stirring occasionally, until apples are soft. If you overcook them, the apples will become more like applesauce, although tasty, not what you want.
While this is cooking, mix up your crumble topping. Using a fork, combine approximately 2/3 cup of flour, 1/2 cup of sugar, 1/4 cup of butter. The mixture should be somewhat crumbly. Add in 2 tablespoons of milk and it will become a bit crumbly and but not too dough-like, similar to a dry cookie dough. Optionally, include a little cinnamon.
This is a fun transformation for the kids, watching the fruit turn from apple tan to a bright plum red color… a little science going on in the kitchen here.
Next you want to pour this mixture into a baking dish. Spoon crumble on top of the fruit mixture. No pictures of this for you today… I was making dinner at the same time and took pictures of pork chops instead of crumble… sorry!
Sometimes I've used cake mix with a little butter and milk to make the crumble too. I've also made it a little more wet so its more like a real cookie dough. Don't be afraid to play with the ingredients to find out which texture and flavor you like best.
Throw it all in the oven and bake at 350 for about 45 minutes. Let cool on the stove top for about 20 minutes and then serve with ice cream.
I served ours in small glasses, just scooping in a couple spoonfuls.
I love the combination of the apple and blueberry flavors in this dessert. It's a great treat to make with fruit that is not as fresh and even works with frozen fruits. You can mix up other flavors as you like. Add other spices, serve with ice cream, whipped cream or just as is.
